Looks hard but is really easy to make. It tastes good too.
Ingredients
- 1 onion sliced
- 1 garlic clove crushed
- 2 tsp olive oil
- 1 red capsicum diced
- 175 g mushrooms chopped
- 450 g tomato roughly chopped
- 1 tbs red wine vinegar
- 1 tsp caster sugar
- 1 1/2 tsp dried basil leaves
- 1 1/2 tsp dried oregano
- 1 salt and pepper *to taste
Pizza Base
- 500 g plain flour
- 1 tsp salt
- 2 tsp dry yeast
- 300 ml lukewarm water
- 125 ml extra virgin olive oil
Method

Step 1Heat oil in a saucepan and cook onion and garlic for 3 minutes.

Step 2Add the capsicum, mushrooms, tomatoes and remaining ingredients. Mix well, bring slowly to the boil, cover and simmer gently for 20 minutes. Stir occasionally.

Step 3Remove cover and boil sauce rapidly for 10 minutes to thicken, stirring occasionally.

Step 4Adjust seasoning to taste before using sauce on base.

Step 5Pizza base: Combine flour and salt in a large bowl. Make a well in the centre.

Step 6Add the yeast, water and 2 tablespoons olive oil. Leave for 15 minutes to dissolve yeast.

Step 7With hands, stir until dough holds together.

Step 8Transfer to floured surface and knead until smooth and elastic. Avoid adding too much flour while kneading.

Step 9Brush side of a clean bowl with 1 tablespoon of the oil, place dough in the bowl and roll around to coat with oil.

Step 10Cover with plastic and leave to raise in a warm place for about 45 minutes to double in size.

Step 11Divide into 2 balls. Preheat oven to 200C, roll each ball into 30 cm circles.

Step 12Place on pizza pan and neaten edges. Brush with oil, cover with toppings and bake for 10-12 minutes or until golden.
Recipe Notes
Use lukewarm water in the base.
You can freeze both the base and the sauce before baking.
Add extra toppings of choice if desired.
