Ingredients

  • 2/3 cup rice
  • 5 cup milk
  • 1/2 cup sugar
  • 2 tsp vanilla essence
  • 450 g (crushed) canned pineapple drained
  • 2 cup whipped cream

Method

  • Step 1
    Bring milk to the boil in a large saucepan.
  • Step 2
    Sprinkle in rice when boiling, reduce heat and cover.
  • Step 3
    Simmer over a low heat for 45-50 minutes or until cooked.
  • Step 4
    Remove from heat, then add sugar and vanilla.
  • Step 5
    Stir well and refrigerate.
  • Step 6
    When cold, fold through cream and pineapple.
  • Step 7
    Refrigerate until chilled and serve.
