A lovely summer dessert!
Ingredients
- 2/3 cup rice
- 5 cup milk
- 1/2 cup sugar
- 2 tsp vanilla essence
- 450 g (crushed) canned pineapple drained
- 2 cup whipped cream
Method

Step 1Bring milk to the boil in a large saucepan.

Step 2Sprinkle in rice when boiling, reduce heat and cover.

Step 3Simmer over a low heat for 45-50 minutes or until cooked.

Step 4Remove from heat, then add sugar and vanilla.

Step 5Stir well and refrigerate.

Step 6When cold, fold through cream and pineapple.

Step 7Refrigerate until chilled and serve.
