Ingredients
- 3.8 kg black olives
- 1 pinch salt
- 2 tbs olive oil
- 3 garlic clove peeled roughly chopped
- 3 bay leaf
Method

Step 1If possible, freshly picked olives should be left in a basket outside to take the frost for at least 3-4 nights, otherwise you can freeze them.

Step 2When they are frozen, prick them with a fork and rub them with fine salt and toss them in a basket 3-4 times a day for a week.

Step 3Mix olives with a little pure olive oil, bay leaves and garlic.

Step 4Keep them in an earthenware jar for storage.
