Ingredients

  • 500g farfalle pasta (bowtie pasta)
  • 190g jar basil pesto
  • 60ml (¼ cup) white balsamic
  • 130g tub mixed olives, drained
  • 1 small red onion, cut into rings
  • 1 cup fresh basil leaves
  • 250g cherry tomatoes, halved
  • 220g tub cherry bocconcini, drained
  • 1 avocado, chopped

Method

  • Step 1
    Cook the pasta in a large saucepan of lightly salted boiling water following packet directions or until al dente. Drain. Refresh under cold running water. Drain well.
  • Step 2
    Combine pesto and balsamic in a large bowl. Season. Add pasta, olives, onion, basil, tomato, bocconcini and avocado, then toss to combine. Season and serve.
