You will never buy a store-bought BBQ chicken again!
Ingredients
- 1 whole chicken fresh large
- 1 onion finely chopped medium
- 1 bunch fresh thyme
- 5 garlic clove
- 2 tbs butter melted
- 4 slices bread
- 1 pinch salt and pepper
- 1/4 cup olive oil
Method

Step 1Preheat oven to 180C.

Step 2Rinse the chicken and set aside.

Step 3Chop the bread in 1 cm cubes.

Step 4Finely chop around ½ cup of thyme and peel the garlic cloves.

Step 5Mix all the ingredients together with the melted butter and season well with salt and pepper.

Step 6Once the stuffing has been prepared, insert into the chicken cavity and secure closed with a wooden skewer. Place extra thyme leaves on top of the chicken and grind more salt and pepper on top with a good drizzle of olive oil.

Step 7Place prepared chicken on a rack in an oven tray and roast for approximately three hours or until the skin is crunchy and golden.

Step 8Drizzle a little olive oil over the chicken during cooking.

Step 9To check whether the chicken is cooked thoroughly, gently pull away a drumstick to ensure the juices are clear.

Step 10Serve with crunchy roast potatoes, steamed vegetables and gravy.
Recipe Notes
Don't crush the garlic gloves otherwise the garlic is rather over-powering. By keeping the cloves whole you will get a lovely sweet, garlicky aroma. The bread stuffing is edible but remember to remove the garlic cloves first! Ideally, this roast chicken is cooked perfectly on a BBQ with the hood down to achieve the perfect smokey flavour. Cooking times may vary depending on the size of the chicken.
