Pearl Couscous with Chorizo Sausages

Ingredients

  • 1 packet pearl couscous
  • 2 chorizo sausage sliced
  • 1 carrot large peeled sliced
  • 1 tsp sweet paprika
  • 1 red capsicum deseeded cut into small pieces
  • 1 green capsicum deseeded cut into small pieces
  • 150 g pumpkin peeled cut into cubes
  • 500 ml chicken stock (liquid)
  • 2 tbs olive oil
  • 1 brown onion diced
  • 1 pinch salt
  • 1 pinch pepper *to season
  • 1/2 cup fresh parsley

Method

  • Step 1
    Heat the oil in a large saucepan over medium heat then add onion and chorizo, and cook for 3 minutes, while stirring.

    Then add the couscous, carrot, pumpkin, both capsicums and paprika and stir for 1 minute.
  • Step 3
    Next, add stock and stir, then cover with a lid and cook until the couscous is soft and all of the liquid has evaporated. Stir occasionally.
  • Step 4
    Taste and season with salt and pepper.
  • Step 5
    Serve hot on a plate and garnish with parsley.

I don't have very many recipes with couscous, but this one is very quick and easy, and yummy.
