This recipe is nice and delicious.
Ingredients
- 1 packet pearl couscous
- 2 chorizo sausage sliced
- 1 carrot large peeled sliced
- 1 tsp sweet paprika
- 1 red capsicum deseeded cut into small pieces
- 1 green capsicum deseeded cut into small pieces
- 150 g pumpkin peeled cut into cubes
- 500 ml chicken stock (liquid)
- 2 tbs olive oil
- 1 brown onion diced
- 1 pinch salt
- 1 pinch pepper *to season
- 1/2 cup fresh parsley
Method

Step 1Heat the oil in a large saucepan over medium heat then add onion and chorizo, and cook for 3 minutes, while stirring.

Step 2Then add the couscous, carrot, pumpkin, both capsicums and paprika and stir for 1 minute.

Step 3Next, add stock and stir, then cover with a lid and cook until the couscous is soft and all of the liquid has evaporated. Stir occasionally.

Step 4Taste and season with salt and pepper.

Step 5Serve hot on a plate and garnish with parsley.

I don't have very many recipes with couscous, but this one is very quick and easy, and yummy.
