Super tasty fruit and nut muffins that are perfect for everyone. These muffins are a delicious snack for all ages and a great way to get the extra fruit into fussy young eaters! - Cargs

Ingredients

  • 1 1/2 cups wholemeal self-raising flour
  • 1/2 cup brown sugar
  • 1 1/2 tbs mixed spice
  • 1/4 cup linseeds *optional
  • A handful sunflower seeds *optional
  • A handful almonds *optional
  • 3 eggs lightly beaten
  • 4 tbs olive oil
  • 2 cups pear chopped
  • 3/4 cup mixed nuts chopped
  • 1/4 cup sunflower seeds optional
  • 1 tsp ground cinnamon

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Sift flour, sugar and spice into mixing bowl
  • Step 3
    Add nuts, seeds and pears, eggs and oil. Mix all together.
  • Step 4
    Spoon into muffin 12 large muffin pans or 24 small muffin pans
  • Step 5
    Bake at 180C for approximately 15 minutes or until browned.
  • Step 6
    Rest for 5 minutes, then transfer to cooling rack and dust with cinnamon.
Recipe Notes

I use walnuts and almonds. I also modify them for school lunches and remove the nuts and LSA (linseed, sunflower and almond mix) but keep the seeds for minerals and fibre content.
