Haloumi, zucchini and corn tray bake slice

Ingredients

  • 2 tsp olive oil
  • 1 medium onion, finely diced
  • 1 clove garlic, crushed
  • 6 eggs
  • 1/3 cup mint, finely chopped
  • 200g haloumi, grated
  • 2 medium zucchini, grated
  • 2 corn cobs, kernels removed
  • 1 cup plain flour

Method

  • Step 1
    Preheat oven to 180C. Grease a slice tin and line it with baking paper.

  • Step 2
    Heat oil in a small saucepan over medium heat. Cook onion and garlic for 5 minutes, stirring often, until onion is translucent. Set aside to cool.
  • Step 3
    In a large bowl, whisk eggs. Stir through mint, haloumi, zucchini, corn and cooked onion mixture. Season well with salt and pepper. Fold through flour.
  • Step 4
    Pour into prepared tin and smooth the top. Bake for 30 minutes until a skewer inserted into the centre comes out clean. Cut into squares and serve.
Recipe Notes

This is delicious served warm from the oven, or at room temperature.

Serve with a salad and crusty bread for a more substantial meal.
