Whether you're after an easy vegetarian dinner or need something for the kids' lunch boxes, this meat-free savoury slice is the perfect option.
Ingredients
- 2 tsp olive oil
- 1 medium onion, finely diced
- 1 clove garlic, crushed
- 6 eggs
- 1/3 cup mint, finely chopped
- 200g haloumi, grated
- 2 medium zucchini, grated
- 2 corn cobs, kernels removed
- 1 cup plain flour
Method

Step 1Preheat oven to 180C. Grease a slice tin and line it with baking paper.

Step 2Heat oil in a small saucepan over medium heat. Cook onion and garlic for 5 minutes, stirring often, until onion is translucent. Set aside to cool.

Step 3In a large bowl, whisk eggs. Stir through mint, haloumi, zucchini, corn and cooked onion mixture. Season well with salt and pepper. Fold through flour.

Step 4Pour into prepared tin and smooth the top. Bake for 30 minutes until a skewer inserted into the centre comes out clean. Cut into squares and serve.
Recipe Notes
This is delicious served warm from the oven, or at room temperature.
Serve with a salad and crusty bread for a more substantial meal.
