Ingredients

  • 2 cups sugar
  • 2/3 cup water
  • 2 tbs liquid glucose
  • 1 cup peanuts salted
  • 1 tbs butter
  • 1 tsp bicarbonate of soda

Method

  • Step 1
    Put sugar, water and glucose in saucepan. Stir over low heat until sugar dissolves.
  • Step 2
    Bring to boil and boil until mixture turnsto an amber colour (it is very important not to stir the mixture or disturb it in any way once it starts to boil).
  • Step 3
    Remove from heat, and working quickly add peanuts, butter and bicarb soda.
  • Step 4
    Stir, then pour into a greased tray and leave to cool until set.
Recipe Notes

You can test the toffee mixture to make sure it is cooked enough (prior to removing from heat) by dropping a small amount into a glass of water. If it cracks when it hits the water it is cooked enough.

After making this recipe a couple of times you get to know when it is cooked enough by looking at the colour of the toffee.
