I love this dish because it's just so easy and fresh. The combination of spinach and fresh herbs really takes you to Italy on a hot summer's day. A great healthy dinner for those weeknights when you don't have time to cook and perfect for al fresco dining.
Ingredients
- 3/4 cup onion chopped
- 1 clove garlic
- 3 cup spinach chopped
- 1 cup ricotta
- 1 tsp fresh lemon juice
- 1 tbs fresh basil
- 1/2 cup fresh parsley
- 1/4 tsp nutmeg
- 1/4 tsp black pepper
- 1/2 tsp salt
- 400 g penne pasta
Method

Step 1Sautée onions and garlic in oil until transparent.

Step 2Rinse the spinach and add to onions. Cover the pan.

Step 3Meanwhile cook pasta in separate pan according to packet instructions.

Step 4Once the spinach has wilted and is still very bright green, puree the sautéed vegetables with the other ingredients and add to pasta. Serve.
Recipe Notes
Transfer the rinsed spinach directly to onions - do not dry off the excess water.
