A twist on mince pasta sauce. I made this recipe at high school, and it has been a family favourite ever since. - ontherun

Ingredients

  • 3 cup spirals pasta shapes
  • 1 onion diced
  • 1 tsp garlic
  • 4 bacon rashers diced
  • 1 green capsicum diced
  • 8 frankfurts sliced
  • 800 g canned chopped tomato
  • 1 tbs tomato paste
  • 1 tsp basil
  • 1 tsp oregano
  • 1 pinch pepper
  • 1 tbs parmesan cheese

Method

  • Step 1
    Cook pasta in boiling water.
    Pasta with Tomato and Frankfurt Sauce
  • Step 2
    Heat oil in frypan.
  • Step 3
    Add onion, garlic, bacon and capsicum and saute for 2-3 minutes.
  • Step 4
    Add frankfurts, cook for a further 2 minutes.
  • Step 5
    Add tomatoes, tomato paste, herbs, garlic and pepper and simmer for 5 minutes.
  • Step 6
    Toss pasta through sauce.
  • Step 7
    Sprinkle with parmesan cheese.

Equipment

  • 1 frying pan
