Ingredients

  • 30 g butter
  • 1 tbs oil
  • 1 onion chopped
  • 1 garlic clove crushed
  • 500 g (fillets) chicken thighs
  • 1/2 cup plain flour
  • 45 g French onion soup mix
  • 2 tsp French mustard
  • 2 tsp paprika
  • 3/4 cup rice rinsed
  • 2 cup water
  • 2 tbs toasted slivered almonds
  • 190 g canned mushroom drained
  • 1/2 cup sour cream
  • 2 tbs parsley fresh

Method

  • Step 1
    Heat butter and oil in a pan, add onion and garlic, cook, stirring until onion is soft
  • Step 2
    Cut chicken into 2 cm cubes, toss in flour.
  • Step 3
    Add chicken to pan with onion mixture, cook, stirring for 5 minutes.
  • Step 4
    Add soup mix, mustard, paprika rice and water.
  • Step 5
    Simmer, covered, 15 minutes stirring occasionally.
  • Step 6
    Just before serving, add almonds, champignons and sour cream to chicken, heat without boiling. Sprinkle with parsley
Recipe Notes

I tend not to put in the almonds as I don't really like them. I use chicken breast sometimes.
