Pancake mix vegetable fritters

These savoury fritters couldn’t be easier to make using ready-made supermarket ingredients quickly whisked together and fried in a pan. They are delicious on their own, and would be great with sour cream and avocado, or as a substantial meal with poached eggs and bacon. - Greer Worsley

Ingredients

  • 500g pkt frozen mixed vegetables
  • 350g pancake mix
  • 1 1/2 cups of water
  • 1 cup grated tasty cheese
  • 1-2 tbsp olive oil

Method

  • Step 1
    Defrost frozen vegetables and drain off any liquid.
  • Step 2
    Pour contents of pancake mix into a large bowl. Whisk in water until a thick but pourable consistency is reached. Season well with plenty of salt and pepper. Fold through cheese and defrosted vegetables.
  • Step 3
    Heat some oil in a large nonstick frypan over medium heat. Add quarter-cup measures of batter. Cook for 1-2 minutes each side until golden brown and cooked through. Remove to a plate and keep warm. Continue until all batter has been used up.
Recipe Notes
  • I used a frozen mix of corn, peas and carrots. You can choose whatever takes your fancy. Alternatively, use fresh veggies quickly blanched.
  • Pancake mix is usually sweetened, so be sure to season the batter with salt and pepper to balance it.
