Ingredients

  • 3 egg
  • 2 1/4 cup caster sugar
  • 3 tsp vanilla essence
  • 1 cup oil
  • 2 cup zucchini grated
  • 3 cup plain flour
  • 1/4 tsp baking powder
  • 1 tsp salt
  • 1 tsp bicarbonate of soda
  • 3 tsp ground cinnamon
  • 1 cup walnuts chopped

Method

  • Step 1
    Beat eggs until light and foamy.
  • Step 2
    Add sugar, vanilla and oil and beat until thick and mousse like.
  • Step 3
    Mixture should leave a trail when poured from a spoon.
  • Step 4
    Stir in grated zucchini.
  • Step 5
    Sift all dry ingredients and fold into zucchini mixture.
  • Step 6
    Add chopped walnuts and pour mixture into 2 loaf tins and bake at 180C for 1-1½ hours.

  • 2 loaf pan
Recipe Notes

Use only fresh zucchinis. The smaller the better. If using large zucchinis, peel and seed before grating. Once cold cut into slices and serve with butter.
