Ingredients
- 3 egg
- 2 1/4 cup caster sugar
- 3 tsp vanilla essence
- 1 cup oil
- 2 cup zucchini grated
- 3 cup plain flour
- 1/4 tsp baking powder
- 1 tsp salt
- 1 tsp bicarbonate of soda
- 3 tsp ground cinnamon
- 1 cup walnuts chopped
Method

Step 1Beat eggs until light and foamy.

Step 2Add sugar, vanilla and oil and beat until thick and mousse like.

Step 3Mixture should leave a trail when poured from a spoon.

Step 4Stir in grated zucchini.

Step 5Sift all dry ingredients and fold into zucchini mixture.

Step 6Add chopped walnuts and pour mixture into 2 loaf tins and bake at 180C for 1-1½ hours.

Recipe Notes
Use only fresh zucchinis. The smaller the better. If using large zucchinis, peel and seed before grating. Once cold cut into slices and serve with butter.
