Five basic, budget-friendly ingredients come together to make a delicious meal the kids will love!
Ingredients
- 1 1/2 tbs light olive oil
- 1 red capsicum sliced
- 1 1/2 cup shallots sliced
- 7 60g eggs lightly beaten
- 1 tbs light soy sauce
- 2 85g instant noodles
Method

Step 1Pre-heat your grill.

Step 2Reserve flavour sachets from noodle packet.

Step 3Add roughly broken noodle cakes to a pan of boiling water, cook for 2 minutes then strain.

Step 4Heat olive oil in large frypan.

Step 5Add capsicum and shallots, cook for 3 minutes.

Step 6Add noodles to the frying pan and stir until combined.

Step 7Whisk the eggs together with the soy sauce and reserved flavour sachets.

Step 8Spread the noodle mixture evenly over the base of the frypan.

Step 9Pour over the egg mixture.

Step 10Cook, and cook over low heat until almost set and golden underneath.

Step 11Place pan under the pre-heated grill and cook until the frittata is set and the top is lightly browned.

Step 12Cut into wedges and serve.

Recipe Notes
Great tasting frittata with the addition of noodles. Serve with salad and crusty bread. Use green shallots and oriental flavoured instant noodles, or noodles of choice.
