Ingredients

  • 1 1/2 tbs light olive oil
  • 1 red capsicum sliced
  • 1 1/2 cup shallots sliced
  • 7 60g eggs lightly beaten
  • 1 tbs light soy sauce
  • 2 85g instant noodles

Method

  • Step 1
    Pre-heat your grill.
  • Step 2
    Reserve flavour sachets from noodle packet.
  • Step 3
    Add roughly broken noodle cakes to a pan of boiling water, cook for 2 minutes then strain.
  • Step 4
    Heat olive oil in large frypan.
  • Step 5
    Add capsicum and shallots, cook for 3 minutes.
  • Step 6
    Add noodles to the frying pan and stir until combined.
  • Step 7
    Whisk the eggs together with the soy sauce and reserved flavour sachets.
  • Step 8
    Spread the noodle mixture evenly over the base of the frypan.
  • Step 9
    Pour over the egg mixture.
  • Step 10
    Cook, and cook over low heat until almost set and golden underneath.
  • Step 11
    Place pan under the pre-heated grill and cook until the frittata is set and the top is lightly browned.
  • Step 12
    Cut into wedges and serve.

  • 1 chargrill pan
Recipe Notes

Great tasting frittata with the addition of noodles. Serve with salad and crusty bread. Use green shallots and oriental flavoured instant noodles, or noodles of choice.
