Ingredients

  • 85 g plain flour
  • 2 egg beaten
  • 200 ml milk
  • 5 ml vanilla extract
  • 25 g butter
  • 820 g canned apricot drained
  • 1 tbs icing sugar *to decorate

Method

  • Step 1
    Preheat oven to 200C.
  • Step 2
    Sift the flour into a large bowl and make a well in the centre. Add eggs and mix.
  • Step 3
    Gradually add flour and stir well to make a thick batter.
  • Step 4
    Whisk in milk and vanilla until the batter is smooth.
  • Step 5
    Place butter in a shallow 20 x 30 cm ovenproof dish and place in oven for 2 minutes.
  • Step 6
    Remove from the oven and arrange the apricots, cut side down, into the dish. Pour batter over fruit.
  • Step 7
    Bake for 30-35 minutes or until puffed and golden. Dust with the icing sugar.
  • Step 8
    Serve with whipped cream, creme fraiche or vanilla ice cream.
Recipe Notes

You can make this with various types of fruit. Plums work very well also.
