Crispy on the outside, soft and fluffy on the inside. A quick French dessert that's easy to make.
Ingredients
- 85 g plain flour
- 2 egg beaten
- 200 ml milk
- 5 ml vanilla extract
- 25 g butter
- 820 g canned apricot drained
- 1 tbs icing sugar *to decorate
Method

Step 1Preheat oven to 200C.

Step 2Sift the flour into a large bowl and make a well in the centre. Add eggs and mix.

Step 3Gradually add flour and stir well to make a thick batter.

Step 4Whisk in milk and vanilla until the batter is smooth.

Step 5Place butter in a shallow 20 x 30 cm ovenproof dish and place in oven for 2 minutes.

Step 6Remove from the oven and arrange the apricots, cut side down, into the dish. Pour batter over fruit.

Step 7Bake for 30-35 minutes or until puffed and golden. Dust with the icing sugar.

Step 8Serve with whipped cream, creme fraiche or vanilla ice cream.
Recipe Notes
You can make this with various types of fruit. Plums work very well also.
