Crunchy, but not crispy, with a nice orange flavour.
Ingredients
- 1 cup butter softened
- 1/2 cup caster sugar
- 3 tbs orange rind finely grated
- 2 cups plain flour
- 1/2 cup rice flour
Method

Step 1Cream butter and sugar until light and fluffy. Add orange rind.

Step 2Mix in sifted flour and rice flour to make a pliable dough.

Step 3Spread the mixture into a greased 20cm square slab tin.

Step 4Bake at 160C-180C for 30 minutes or until golden brown.

Step 5Mark into squares while warm. Cut into squares when cold.
