Ingredients

  • 1 cup butter softened
  • 1/2 cup caster sugar
  • 3 tbs orange rind finely grated
  • 2 cups plain flour
  • 1/2 cup rice flour

Method

  • Step 1
    Cream butter and sugar until light and fluffy. Add orange rind.

  • Step 2
    Mix in sifted flour and rice flour to make a pliable dough.
  • Step 3
    Spread the mixture into a greased 20cm square slab tin.
  • Step 4
    Bake at 160C-180C for 30 minutes or until golden brown.
  • Step 5
    Mark into squares while warm. Cut into squares when cold.
