This recipe uses a whole unpeeled orange. The combination of orange and chocolate is very nice.
Ingredients
- 1 orange unpeeled
- 1/3 cup orange juice
- 1 egg
- 1/2 cup butter
- 1/2 tsp vanilla essence
- 1 3/4 cups plain flour
- 3/4 cup sugar
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 3/4 cup milk chocolate chips *optional
Method

Step 1Cut washed orange into 7 or 8 pieces. Remove seeds.

Step 2Combine orange pieces and juice together and then blend in blender or food processor. Add egg, butter and vanilla to mixture. Blend.

Step 3Pour into a medium-sized bowl.

Step 4In a separate bowl, measure flour, sugar, baking powder and baking soda. Whisk together thoroughly. Mix dry mixture with orange batter only until well combined.

Step 5Add choclolate chips and mix gently to avoid overmixing.

Step 6Fill greased muffin tin ¾ full and bake for 20 minutes at 200C.

Step 7Watch carefully as these bake quickly. Remove from tins after 5 minutes of cooling.

Recipe Notes
I've also made these muffins using approximately ¾ cup of orange juice only instead of the whole orange, and they turned out really nice.
