Ingredients

  • 1 cup self-raising flour
  • 1 cup sugar
  • 1 cup desiccated coconut
  • 1 cup plain yoghurt

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Line a muffin tin with paper patty pans.
  • Step 3
    Combine all ingredients and place in tin.
  • Step 4
    Bake for 10-15 minutes or until a skewer inserted into the centre comes out clean.
Recipe Notes
You can add ⅔ cup choc chips, berries or mixed dried fruit to the muffin batter. You can also use a flavoured yoghurt.
