Ingredients

  • 1 kg pork shoulder cubed
  • 2 onion sliced
  • 2 tbs butter
  • 500 g mixed vegetables
  • 1 kg potato cut into wedges peeled
  • 500 g white cabbage
  • 3 tbs fresh mixed herbs *to serve
  • 1 beef bones

Method

  • Step 1
    Cube the meat and slice onions. Melt the fat in heavy saucepan and fry meat until seared on both sides.
  • Step 2
    Add onions. Cover and allow to stew gently while preparing vegetables.
  • Step 3
    Peel and cube root vegetables and add to meat. Add the marrow bone if using.
  • Step 4
    Add stock and season with salt and pepper.
  • Step 5
    Cover and bring to boil. Turn heat down and simmer for 1 hour. You may need to add a little more liquid .
  • Step 6
    Peel and slice potatoes into thick wedges. Add them 20 minutes before the end of cooking time.
  • Step 7
    Shred cabbage or top and tail beans. Put on top of stew and cook for at least 10 more minutes.
  • Step 8
    Remove marrow bone and scrape out marrow into stew.
  • Step 9
    Stir and add fresh herbs just before serving.
Recipe Notes
Nice with dumplings or a thick slice of fresh home made bread. Any kind of meat can be used. Bone marrow is optional. I prefer to use root vegetables e.g. carrot, turnip, kohlrabi, celery, leek, etc. Water can be substituted with stock. White cabbage can be substituted with green beans. Herbs are of your choice.
