This okra dish is a hearty stew with robust flavours of tomato, spices and meat. The okra naturally thickens this stew beautifully for a wholesome delicious dinner. - Seryem

Ingredients

  • 300g okra
  • 300g lamb or beef, cubed
  • 2 tbs oil
  • 1 onion, diced
  • 1 sweet chilli, diced
  • 1 tomato, peeled and diced
  • 1 tbs tomato paste
  • 1/2 tsp black pepper
  • 1/2 tsp chilli flakes
  • Juice of 1/2 a lemon
  • Salt

Method

  • Step 1
    In a large pot sear the meat with the oil and add the diced onion until aromatic.
  • Step 2
    Add the sweet chilli, tomatoes and cook for another minute or two. Finally add the tomato paste, black pepper and chilli flakes as well as 2 litres of hot water. Mix until combined and cook on medium heat until the water comes to the boil.
  • Step 3
    Add the lemon, salt, and okra in and cook on low heat for 1 hour. This is usually ready in 60 minutes, but I like to cook mine extra for tender pieces of meat. I served mine with burghul pilaf.
