This okra dish is a hearty stew with robust flavours of tomato, spices and meat. The okra naturally thickens this stew beautifully for a wholesome delicious dinner.
Ingredients
- 300g okra
- 300g lamb or beef, cubed
- 2 tbs oil
- 1 onion, diced
- 1 sweet chilli, diced
- 1 tomato, peeled and diced
- 1 tbs tomato paste
- 1/2 tsp black pepper
- 1/2 tsp chilli flakes
- Juice of 1/2 a lemon
- Salt
Method

Step 1In a large pot sear the meat with the oil and add the diced onion until aromatic.

Step 2Add the sweet chilli, tomatoes and cook for another minute or two. Finally add the tomato paste, black pepper and chilli flakes as well as 2 litres of hot water. Mix until combined and cook on medium heat until the water comes to the boil.

Step 3Add the lemon, salt, and okra in and cook on low heat for 1 hour. This is usually ready in 60 minutes, but I like to cook mine extra for tender pieces of meat. I served mine with burghul pilaf.
