A delicious salad with a sweet edge.
Ingredients
- 2 pear
- 2 bunch rocket leaves
- 100 g blue cheese
- 80 g walnuts shelled
- 2 tbs vegetable oil
- 2 tbs icing sugar
- 1 pinch salt and pepper
Dressing
- 150 ml olive oil
- 50 ml balsamic vinegar
- 1 tbs honey
Method

Step 1Peel, core and slice the pears into thin slices.

Step 2Heat oil in a frypan and brown the pears on both sides. Season with salt and pepper and transfer to a tray.

Step 3Wipe out the pan and dry roast the walnuts, tossing continuously. Add the icing sugar and turn off the heat. Stir the walnuts until sugar caramelises.

Step 4Mix the oil, honey and balsamic vinegar together and season with salt and pepper.

Step 5Mix the rocket, pears and walnuts together and crumble in the blue cheese.

Step 6Add the dressing just before serving.
Recipe Notes
I use a good blue cheese such as Castello or Stilton. Goat's cheese can also be used instead of the blue cheese.
