Pear, rocket and blue cheese salad

Ingredients

  • 2 pear
  • 2 bunch rocket leaves
  • 100 g blue cheese
  • 80 g walnuts shelled
  • 2 tbs vegetable oil
  • 2 tbs icing sugar
  • 1 pinch salt and pepper

Dressing

  • 150 ml olive oil
  • 50 ml balsamic vinegar
  • 1 tbs honey

Method

  • Step 1
    Peel, core and slice the pears into thin slices.
  • Step 2
    Heat oil in a frypan and brown the pears on both sides. Season with salt and pepper and transfer to a tray.
  • Step 3
    Wipe out the pan and dry roast the walnuts, tossing continuously. Add the icing sugar and turn off the heat. Stir the walnuts until sugar caramelises.
  • Step 4
    Mix the oil, honey and balsamic vinegar together and season with salt and pepper.
  • Step 5
    Mix the rocket, pears and walnuts together and crumble in the blue cheese.
  • Step 6
    Add the dressing just before serving.
Recipe Notes

I use a good blue cheese such as Castello or Stilton. Goat's cheese can also be used instead of the blue cheese.
