Remember when Nana brought out a plate of her delicious white Christmas squares?
Ingredients
- 250g copha (or virgin coconut oil)
- 1 cup milk powder
- 1 cup dessicated coconut
- 1 cup icing sugar
- 2/3 cup mixed fruit
- 2/3 cup glace cherries, halved
- 3 tablespoons candied orange rind, finely chopped
- 1/2 cup almonds
- 1 1/2 cups of Rice Bubbles
Method

Step 1Line a square lamington tin with baking paper.

Step 2In a medium saucepan, heat the copha until just melted. Remove from heat and allow to cool slightly (but not harden).

Step 3Stir in the milk powder and coconut, and sift in the icing sugar and the stir vigorously until combined.

Step 4Add the remaining ingredients, one by one, and stir after each addition.

Step 5Pour the mixture into the lamington tin, and smooth the top using a spatula. Place in the fridge and allow to harden.

Step 6Remove from the tin, and using a heavy knife, cut into squares.
