Ingredients

  • 250g copha (or virgin coconut oil)
  • 1 cup milk powder
  • 1 cup dessicated coconut
  • 1 cup icing sugar
  • 2/3 cup mixed fruit
  • 2/3 cup glace cherries, halved
  • 3 tablespoons candied orange rind, finely chopped
  • 1/2 cup almonds
  • 1 1/2 cups of Rice Bubbles

Method

  • Step 1
    Line a square lamington tin with baking paper.
  • Step 2
    In a medium saucepan, heat the copha until just melted. Remove from heat and allow to cool slightly (but not harden).
  • Step 3
    Stir in the milk powder and coconut, and sift in the icing sugar and the stir vigorously until combined.
  • Step 4
    Add the remaining ingredients, one by one, and stir after each addition.
  • Step 5
    Pour the mixture into the lamington tin, and smooth the top using a spatula. Place in the fridge and allow to harden.
  • Step 6
    Remove from the tin, and using a heavy knife, cut into squares.

Makes 16 squares.
