Delicious for breakfast or lunch, straight from the oven or packed for a picnic, these savoury puffs are baked in a muffin pan for an easy-peasy meal or snack. - Greer Worsley

Ingredients

  • 3/4 cup grated tasty cheese
  • 100g ham, diced
  • 1/2 cup peas
  • 1/2 cup corn kernels
  • 1 small zucchini, grated
  • 8 slices soft bread
  • 3 eggs
  • 1 cup milk

Method

  • Step 1
    Preheat oven to 180C. Grease 8 cups of a 12-cup muffin tin.
  • Step 2
    Combine cheese, ham, peas, corn, zucchini and mustard in a bowl. Season well with salt and pepper. In a small jug, whisk together eggs and milk.
  • Step 3
    Remove crusts from bread and cut each into four squares. Place a square in the base of each greased muffin cup, top with a spoonful of cheese and ham mix, and repeat until you have three layers. Cut remaining bread squares in half diagonally and place two on top of each stack. Whisk together eggs and milk and pour over layered bread stacks, pressing down to ensure everything is soaked.
  • Step 4
    Bake for 15 minutes until golden and set.
Recipe Notes

I used white sliced bread but you could try with sourdough or even brioche.
