Use the muffin pan to make these easy chorizo and capsicum quiches. They’ll save you time so you can have something delicious in the oven when friends pop in.
Ingredients
- 12 slices white toast bread, crusts removed
- Olive oil spray
- 2 chorizo sausages, thinly sliced
- 4 eggs
- 1/2 cup pure cream
- 1/3 cup milk
- 1/2 cup drained roasted red pepper strips
- 3/4 cup grated tasty cheese
- 3 green onions, thinly sliced

Step 1Preheat oven to 180C/160C fan-forced. Grease a 12-hole, 1/3 cup-capacity muffin pan.

Step 2Using a rolling pin, flatten each slice of bread slightly. Spray each side of bread with oil. Line prepared pan holes with bread, pressing to form a case. Bake for 10 minutes or until lightly golden and crisp. Remove from the oven.

Step 3Meanwhile, heat a large frying pan over medium-high heat. Add chorizo. Cook, turning, for 3 to 4 minutes or until golden and crisp. Transfer to paper towel to drain.

Step 4Whisk eggs, cream and milk together. Season with salt and pepper. Divide pepper strips, chorizo, cheese and 2/3 of onion among bread cases. Carefully pour over egg mixture. Bake for 20 minutes or until golden and set. Serve quiches sprinkled with remaining onion.
