Make your own shapes for Christmas, or any occasion.
Ingredients
- 175 g unsalted butter
- 300 g caster sugar
- 1 egg
- 1 egg yolk
- 1 tsp vanilla essence
- 1 pinch salt
- 300 g plain flour
- 1 lemon rind grated
- 1/2 cup plain flour *extra for dusting
Method

Step 1Pre-heat oven to 190C.

Step 2Beat butter with an electric mixer. Gradually add the sugar and continue beating until light and fluffy.

Step 3Using a wooden spoon, mix in whole egg and egg yolk. Add vanilla essence, lemon and salt. Stir to mix well.

Step 4Sift flour into mix, stir to blend. Gather dough in a ball, cover with plastic wrap and chill in the fridge for 30 minutes.

Step 5Lightly flour a clean surface with the extra flour and roll dough out until 1cm thick. Any thinner and they'll fall apart when you lift them. Also be sure to use enough flour on your surface or else the dough will stick and fall apart.

Step 6Cut out shapes and place on baking trays.

Step 7Bake for about 8-10 minutes, or until golden brown. Leave to cool for 5 minutes before transferring to a cooling rack.

Step 8Decorate if desired.
