In hot weather this salad is very refreshing.
Ingredients
- 4 potato
- 3 carrot peeled
- 1 cup frozen peas
- 500 g cooked prawns
- 700 g (meat) crab
- 200 ml low-fat mayonnaise
- 1 cup corn cob kernels
- 1 celery stick sliced
- 3 tomato cut into pieces
- 2 pinches salt
- 2 pinches pepper
- 2 long green shallots sliced

Step 1Wash potatoes and pierce with fork. Place in a microwave-safe bowl, cover with lid and cook in microwave for 4 minutes on high. Remove from microwave and add potatoes to a bowl of cold water. Drain and peel the skin off the potatoes. Cut the potatoes into small cubes and set aside in a bowl.

Step 2Add peeled carrots to microwave-safe bowl, cover and cook in microwave for 4 minutes, Cool, then cut to smaller pieces.Add to the potatoes.

Step 3Add peas to microwave-safe bowl, cover and cook in microwave for 4 minutes, Cool, then cut to smaller pieces. Add to the potatoes and carrots.

Step 4Add all remaining ingredients, season with salt and black pepper and mix all well together. Taste and see if anything needs to be added. Serve cold.
Recipe Notes
You'll need about 230g of carrots, or 3 medium carrots.
