Ingredients

  • 2 cups self-raising flour sifted
  • 3/4 cup brown sugar
  • 1 egg lightly beaten
  • 3/4 cup buttermilk
  • 1/2 cup vegetable oil
  • 150 g mixed berries

Topping

  • 1/4 cup brown sugar firmly packed
  • 1/4 cup shredded coconut
  • 1/4 cup plain flour
  • 50 g butter

Method

  • Step 1
    Preheat oven to 180C. Grease muffin tray.
  • Step 2
    Combine flour and sugar in a large bowl.
  • Step 3
    Add egg, milk and oil, stir until just combined.
  • Step 4
    Add berries to mixture, fold in lightly. Spoon mixture into prepared pan.
  • Step 5
    Topping: Combine sugar, flour and coconut in a small bowl.
  • Step 6
    Rub in butter. Sprinkle over muffins.
  • Step 7
    Bake for 20 minutes.
