A light, fluffy and very tasty muffin. The sweetness of the crumble topping compliments any bitterness of the berries you may use in the muffins.
Ingredients
- 2 cups self-raising flour sifted
- 3/4 cup brown sugar
- 1 egg lightly beaten
- 3/4 cup buttermilk
- 1/2 cup vegetable oil
- 150 g mixed berries
Topping
- 1/4 cup brown sugar firmly packed
- 1/4 cup shredded coconut
- 1/4 cup plain flour
- 50 g butter
Method

Step 1Preheat oven to 180C. Grease muffin tray.

Step 2Combine flour and sugar in a large bowl.

Step 3Add egg, milk and oil, stir until just combined.

Step 4Add berries to mixture, fold in lightly. Spoon mixture into prepared pan.

Step 5Topping: Combine sugar, flour and coconut in a small bowl.

Step 6Rub in butter. Sprinkle over muffins.

Step 7Bake for 20 minutes.
