An American classic.
Ingredients
- 250 g butter chopped
- 180 g dark chocolate chopped
- 1/2 cup milk
- 1 tbs instant coffee powder
- 1/4 cup bourbon
- 1 3/4 cup caster sugar
- 1 1/2 cup plain flour
- 1/3 cup self-raising flour
- 1/4 cup cocoa powder
- 2 egg lightly beaten
- 2 cup white marshmallows halved
- 1 tbs milk
Chocolate sauce
- 180 g dark chocolate chopped
- 1/3 cup thickened cream
Method

Step 1Place butter, chocolate, milk, ¼ cup water, coffee, whiskey and sugar in a large saucepan over medium-low heat. Cook, stirring occasionally, for 5 to 6 minutes or until mixture is smooth and combined. Set aside to cool completely.

Step 2Preheat oven to 160°C/140°C fan-forced. Grease a 4cm-deep, 19cm square cake pan. Line base and sides with 2 layers of baking paper.

Step 3Sift flours and cocoa powder over cooled chocolate mixture. Stir well to combine. Stir in egg. Pour mixture into prepared pan.

Step 4Bake for 1 hour 30 minutes to 1 hour 45 minutes or until a skewer inserted into centre of cake comes out with moist crumbs clinging. Cool completely in pan.

Step 5Remove cake from pan and place, top-side up, on a baking tray.

Step 6Place marshmallow and extra milk in a heavy-based saucepan over medium heat. Cook, stirring constantly, for 2 to 3 minutes or until marshmallow has melted and mixture is smooth. Transfer to a heatproof bowl. Stand for 20 minutes or until thickened slightly.

Step 7Preheat grill on high heat. Spread mixture over top of cake. Grill for 1 to 2 minutes or until marshmallow mixture just starts to turn golden. Set aside to cool.

Step 8Meanwhile, make Chocolate sauce: Place chocolate and cream in a microwave-safebowl. Microwave on HIGH (100%), stirring with a metal spoon every 30 seconds, for 1 to 2 minutes or until smooth and combined. Set aside for 20 minutes to cool.

Step 9Drizzle chocolate sauce over top of cake. Serve immediately.

Recipe Notes
You’ll need 1 x 50g packet marshmallows. Use the white ones. Store remainder in an airtight container.
