Ingredients

  • 250 g butter chopped
  • 180 g dark chocolate chopped
  • 1/2 cup milk
  • 1 tbs instant coffee powder
  • 1/4 cup bourbon
  • 1 3/4 cup caster sugar
  • 1 1/2 cup plain flour
  • 1/3 cup self-raising flour
  • 1/4 cup cocoa powder
  • 2 egg lightly beaten
  • 2 cup white marshmallows halved
  • 1 tbs milk

Chocolate sauce

  • 180 g dark chocolate chopped
  • 1/3 cup thickened cream

Method

  • Step 1
    Place butter, chocolate, milk, ¼ cup water, coffee, whiskey and sugar in a large saucepan over medium-low heat. Cook, stirring occasionally, for 5 to 6 minutes or until mixture is smooth and combined. Set aside to cool completely.
  • Step 2
    Preheat oven to 160°C/140°C fan-forced. Grease a 4cm-deep, 19cm square cake pan. Line base and sides with 2 layers of baking paper.
  • Step 3
    Sift flours and cocoa powder over cooled chocolate mixture. Stir well to combine. Stir in egg. Pour mixture into prepared pan.
  • Step 4
    Bake for 1 hour 30 minutes to 1 hour 45 minutes or until a skewer inserted into centre of cake comes out with moist crumbs clinging. Cool completely in pan.
  • Step 5
    Remove cake from pan and place, top-side up, on a baking tray.
  • Step 6
    Place marshmallow and extra milk in a heavy-based saucepan over medium heat. Cook, stirring constantly, for 2 to 3 minutes or until marshmallow has melted and mixture is smooth. Transfer to a heatproof bowl. Stand for 20 minutes or until thickened slightly.
  • Step 7
    Preheat grill on high heat. Spread mixture over top of cake. Grill for 1 to 2 minutes or until marshmallow mixture just starts to turn golden. Set aside to cool.
  • Step 8
    Meanwhile, make Chocolate sauce: Place chocolate and cream in a microwave-safebowl. Microwave on HIGH (100%), stirring with a metal spoon every 30 seconds, for 1 to 2 minutes or until smooth and combined. Set aside for 20 minutes to cool.
  • Step 9
    Drizzle chocolate sauce over top of cake. Serve immediately.

Recipe Notes

You’ll need 1 x 50g packet marshmallows. Use the white ones. Store remainder in an airtight container.
