Ingredients

  • 50 g butter melted
  • 2 eggs
  • 1 cup milk
  • 1 1/2 cups self-raising flour
  • 3 tbs sugar

Method

  • Step 1
    Measure ingredients into a large bowl, in the order listed.

    Beat with a beater just until no longer lumpy. Do not overbeat, or pancakes will be tough.
  • Step 3
    Heat a frypan, then spray or butter it lightly. Pour approximately ¼ cup batter into the pan.
  • Step 4
    Turn pancake when bubbles break in the middle of the pancake. Cook until the middle springs back when pressed with a finger.
  • Step 5
    Serve with a little butter and maple syrup.

How do I make my pancakes fluffy?

One of the most common mistakes when making pancakes is when you overbeat the mixture. This causes the gluten in the flour to over-develop, which will make your pancakes chewy instead of light and fluffy. Mix lightly with a whisk until just combined and then you're ready to go!

What should I serve with American pancakes?
