Ingredients

  • 8 egg boiled peeled small
  • 250 g beef mince
  • 500 g sausage (beef) minced
  • 1 brown onion finely chopped medium
  • 1/3 cup tomato paste
  • 2 egg lightly beaten
  • 1/3 cup fresh curly parsley chopped
  • 2/3 cheese
  • 1 cup dried breadcrumbs
  • 1/4 cup barbecue sauce
  • 1 fresh mixed herbs *to serve

Method

  • Step 1
    Grease an 8 cup muffin pan.
  • Step 2
    Combine mince, onion, paste, extra eggs, parsley, cheese and breadcrumbs in a large bowl. Mix well.
  • Step 3
    Divide mixture evenly into eight portions. Shape mince around each egg and place into muffin pans.
  • Step 4
    Brush sauce evenly over the top of loaves.
  • Step 5
    Cook at 180C for about 20 minutes or until mince is cooked through.
  • Step 6
    Stand in pan for 5 minutes before removing.
  • Step 7
    Serve hot or cold and garnish with fresh herbs.
Recipe Notes
You can use tasty cheese if desired. You can also roll them in seasoned flour, beaten eggs and bread crumbs before putting in pans.
