These are nice as finger food.
Ingredients
- 8 egg boiled peeled small
- 250 g beef mince
- 500 g sausage (beef) minced
- 1 brown onion finely chopped medium
- 1/3 cup tomato paste
- 2 egg lightly beaten
- 1/3 cup fresh curly parsley chopped
- 2/3 cheese
- 1 cup dried breadcrumbs
- 1/4 cup barbecue sauce
- 1 fresh mixed herbs *to serve
Method

Step 1Grease an 8 cup muffin pan.

Step 2Combine mince, onion, paste, extra eggs, parsley, cheese and breadcrumbs in a large bowl. Mix well.

Step 3Divide mixture evenly into eight portions. Shape mince around each egg and place into muffin pans.

Step 4Brush sauce evenly over the top of loaves.

Step 5Cook at 180C for about 20 minutes or until mince is cooked through.

Step 6Stand in pan for 5 minutes before removing.

Step 7Serve hot or cold and garnish with fresh herbs.
Recipe Notes
You can use tasty cheese if desired. You can also roll them in seasoned flour, beaten eggs and bread crumbs before putting in pans.
