These quiches can be made in large amounts and frozen.

Ingredients

  • 2 sheets puff pastry
  • 125 g bacon rashers chopped
  • 3 egg
  • 1/2 cup milk
  • 1/2 cup cheese
  • 1/2 tsp mixed herbs
  • 1 pinch fresh mixed herbs *to decorate

Method

  • Step 1
    Preheat oven to 200C. Lightly grease 18 patty cake pans.
  • Step 2
    Cut pastry using a 7 cm cutter. Place pastry into bases of patty cake pans.
  • Step 3
    Fill each with a little bacon and cheese.
  • Step 4
    Combine milk, eggs and herbs. Pour mixture into the cases.

  • Step 5
    Bake for 15-20 minutes. Cool for 5 minutes before serving.
Recipe Notes

I use muffin tins and extra pastry to make larger quiches.
