These quiches can be made in large amounts and frozen.
Ingredients
- 2 sheets puff pastry
- 125 g bacon rashers chopped
- 3 egg
- 1/2 cup milk
- 1/2 cup cheese
- 1/2 tsp mixed herbs
- 1 pinch fresh mixed herbs *to decorate
Method

Step 1Preheat oven to 200C. Lightly grease 18 patty cake pans.

Step 2Cut pastry using a 7 cm cutter. Place pastry into bases of patty cake pans.

Step 3Fill each with a little bacon and cheese.

Step 4Combine milk, eggs and herbs. Pour mixture into the cases.

Step 5Bake for 15-20 minutes. Cool for 5 minutes before serving.
Recipe Notes
I use muffin tins and extra pastry to make larger quiches.
