Ingredients

  • 1 small brown onion, grated
  • 25g (½ cup) panko breadcrumbs
  • 1 egg
  • 500g lean beef mince
  • 2 garlic cloves, crushed
  • 1 tbsp Dijon mustard
  • 2 tsp dried oregano
  • 1/2 small red onion, cut into wedges
  • Mash and steamed greens, to serve

Sticky glaze

  • 80ml (1/3 cup) smokey barbecue sauce
  • 1 tbsp maple syrup
  • 2 tsp worcestershire sauce
  • 1 tsp apple cider vinegar

Method

  • Step 1
    Combine brown onion, breadcrumbs and egg in a large bowl. Add mince, garlic, mustard and oregano. Season and use clean hands to mix until well combined.
  • Step 2
    Divide mixture into 4 portions. Shape each portion into a meatloaf shape.
  • Step 3
    Line an airfryer with baking paper. Place meatloaves on paper. Cook on 180C for 15 minutes.
  • Step 4
    Meanwhile, to make sticky glaze, combine ingredients in a small bowl. Season.
  • Step 5
    Brush meatloaves with glaze and top with red onion. Cook for a further 5 minutes. Brush onion and meatloaves with remaining glaze and cook for a further 2 minutes or until meatloaves are cooked through.
  • Step 6
    Serve meatloaves with mash and steamed greens.
