Ingredients

  • 60 g butter grated
  • 1 cup cheese shredded
  • 2 cup self-raising flour sifted
  • 1 pinch salt
  • 1 cup milk
  • 1 cup plain flour to coat
  • 1/2 cup cheese shredded to coat
  • 1/2 cup butter grated to coat

Method

  • Step 1
    Rub the butter and cheese into the flour and salt.
  • Step 2
    Make a well in the flour then add the milk, stirring with a flat blade from the middle to the outer until evenly combined. Add shallots, if using.
  • Step 3
    Knead and then roll on a floured surface into a round about 3 cm in height.
  • Step 4
    Sprinkle the top with extra cheese and dot with butter.
  • Step 5
    Place on a greased baking slide and bake at 220C for approximately 25 minutes.
Recipe Notes
I prefer at least some buttermilk topped up with ordinary milk but either way the taste is excellent. There is no need for a rolling pin as the mixture is easy to get into shape by hand. Using greaseproof paper for the flour when rolling saves on clean up time. Add chopped shallots of chives to taste.
