Ingredients

  • 250 g self-raising flour
  • 125 g margarine
  • 125 g caster sugar
  • 1 bunch egg beaten
  • 2 tbs milk
  • 1 fruit mince
  • 1 pinch brown sugar

Method

  • Step 1
    Sift flour and rub in margarine until it resembles breadcrumbs. Stir in sugar.
  • Step 2
    Add egg and enough milk to make a fairly stiff dough. Divide in half and roll out each piece to approximately 22 x 12 cm.
  • Step 3
    Place one piece on greased baking tray. Then spread generously with the mincemeat to within 1.5 cm of edges.
  • Step 4
    Place other piece on top, damping the edges and sealing firmly.
  • Step 5
    Lightly mark edges with a fork.
  • Step 6
    Brush top with milk and sprinkle with brown sugar. Bake in centre of a 190C oven for 15 minutes.
Recipe Notes
For serving cut into 5 cm squares with cream or ice cream.
