A quick and tasty stir-fry adapted from a Super Food Ideas magazine recipe, complete with the goodness of vegetables and a whole lot of flavour.
Ingredients
- 450 g hokkien noodles fresh
- 1 1/2 tbs peanut oil
- 500 g beef mince
- 1 brown onion halved
- 3 garlic cloves crushed
- 300 g broccoli broken into florets small
- 120 g baby corn thinly sliced
- 1 carrot chopped
- 1 red capsicum chopped small
- 1/2 cup soy sauce
- 1/2 cup barbecue sauce
- 2 tsp sesame oil
- 2 spring onions thinly sliced
Method

Step 1Place noodles in a heatproof bowl and cover with boiling water. Cover and stand for 2-3 minutes, then using a fork, separate noodles and drain.

Step 2Add 1 tablespoon of peanut oil to a hot wok or electric frypan and swirl to coat.

Step 3Add mince to pan and break up with a wooden spoon. Cook for 6 minutes or until mince is browned. Remove and drain any fat and place mince in a bowl.

Step 4Add remaining peanut oil to pan then add onion and garlic. Stir fry for 1 minute.

Step 5Add broccolli, corn, carrot and capsicum and stir fry for 3-4 minutes or until just tender.

Step 6Return mince to pan and add soy sauce, barbeque sauce and sesame oil and stir-fry for 1 minute.

Step 7Add drained noodles and spring onions, and stir to combine.
