A date cake cooked in the microwave.
Ingredients
- 1 cup water
- 1 cup dates
- 1/2 cup brown sugar
- 1 1/2 tbs butter
- 1 tsp bicarbonate of soda
- 1 cup self-raising flour
- 1 egg beaten
Method

Step 1Combine water, dates, sugar, and butter in a large glass jug.

Step 2Cook in microwave approximately 4½ minutes on high, cool for 2 minutes.

Step 3Mash with fork.

Step 4Add 1 teaspoon bi-carb soda to 1 cup self-raising flour and mix with date mixture.

Step 5Stir through egg.

Step 6Place in microwave ring tin and cook for another 4½ minutes.
Recipe Notes
Makes a very nice moist date cake - it is also nice warmed up with hot custard and/or ice-cream. I use a 1100 watt microwave and a Starmaid microwave dish which does not need to be greased or lined.
