Ingredients

1 cup water
1 cup dates
1/2 cup brown sugar
1 1/2 tbs butter
1 tsp bicarbonate of soda
1 cup self-raising flour
1 egg beaten

Method

Step 1

Combine water, dates, sugar, and butter in a large glass jug.
Step 2

Cook in microwave approximately 4½ minutes on high, cool for 2 minutes.
Step 3

Mash with fork.
Step 4

Add 1 teaspoon bi-carb soda to 1 cup self-raising flour and mix with date mixture.
Step 5

Stir through egg.
Step 6

Place in microwave ring tin and cook for another 4½ minutes.

Makes a very nice moist date cake - it is also nice warmed up with hot custard and/or ice-cream. I use a 1100 watt microwave and a Starmaid microwave dish which does not need to be greased or lined.
