Ingredients

  • 2 corncobs husks removed
  • 1/2 green capsicum deseeded finely chopped
  • 2 spring onions thinly sliced
  • 1 tbs pickled jalapenos
  • 1/2 lime juiced
  • 25 g smooth fetta crumbled
  • 24 Patties Mexican Beef and Salsa Party Pies
  • 1 tub sour cream *to serve
  • 1 pinch paprika *to taste *to serve
  • 1 bunch coriander leaves *to serve

Method

  • Step 1
    Preheat a chargrill or barbecue grill over medium-high heat. Spray the corn with oil. Cook the corn, turning occasionally, for 12-15 minutes or until corn is tender and lightly charred. Remove from the grill and set aside until cool enough to handle. Remove the corn kernels.
  • Step 2
    Combine the corn, capsicum, spring onions, jalapenos, lime juice and fetta in a bowl. Season and toss to combine.
  • Step 3
    Prepare the Patties Party Pies following the packet directions.
  • Step 4
    Arrange pies on a serving platter. Top with a dollop of sour cream, a sprinkle of paprika, the corn mixture and coriander.
