A tasty entertainer platter doesn't get much easier than this.
Ingredients
- 2 corncobs husks removed
- 1/2 green capsicum deseeded finely chopped
- 2 spring onions thinly sliced
- 1 tbs pickled jalapenos
- 1/2 lime juiced
- 25 g smooth fetta crumbled
- 24 Patties Mexican Beef and Salsa Party Pies
- 1 tub sour cream *to serve
- 1 pinch paprika *to taste *to serve
- 1 bunch coriander leaves *to serve
Method

Step 1Preheat a chargrill or barbecue grill over medium-high heat. Spray the corn with oil. Cook the corn, turning occasionally, for 12-15 minutes or until corn is tender and lightly charred. Remove from the grill and set aside until cool enough to handle. Remove the corn kernels.

Step 2Combine the corn, capsicum, spring onions, jalapenos, lime juice and fetta in a bowl. Season and toss to combine.

Step 3Prepare the Patties Party Pies following the packet directions.

Step 4Arrange pies on a serving platter. Top with a dollop of sour cream, a sprinkle of paprika, the corn mixture and coriander.
