Had to be inventive at work for lunch with minimal ingredients!
Ingredients
- 1/2 can Mexican beans
- 4 cherry tomatoes chopped
- 1/4 red onion finely diced
- 1/2 tsp chilli
- 1 tbs avocado dip
Method

Step 1Add all ingredients (except avocado dip) and mix, then microwave for 1 minute. When done, top with avocado dip.
Recipe Notes
Could also add a poached egg and serve for breakfast with some toast.
