So good the kids will want you to make it again and again.
Ingredients
- 125 g butter
- 1 cup caster sugar
- 2 egg separated
- 1 cup self-raising flour sifted
- 1 cup desiccated coconut
Method

Step 1Preheat oven to 180C. Cream the butter and half of the sugar together until light and fluffy.

Step 2Add the egg yolks and beat.

Step 3Fold in the flour then flour your fingertips and press the dough into a greased 18 x 28 cm tin.

Step 4Beat egg whites into stiff peaks. Gradually add in the rest of the sugar until thick and glossy.

Step 5Fold in the coconut.

Step 6Spread meringue over pastry base and bake for 25 to 30 minutes or until skewer comes out clean and dry.

Step 7Cool then cut into squares.
