Ingredients

  • 125 g butter
  • 1 cup caster sugar
  • 2 egg separated
  • 1 cup self-raising flour sifted
  • 1 cup desiccated coconut

Method

  • Step 1
    Preheat oven to 180C. Cream the butter and half of the sugar together until light and fluffy.
  • Step 2
    Add the egg yolks and beat.
  • Step 3
    Fold in the flour then flour your fingertips and press the dough into a greased 18 x 28 cm tin.
  • Step 4
    Beat egg whites into stiff peaks. Gradually add in the rest of the sugar until thick and glossy.
  • Step 5
    Fold in the coconut.
  • Step 6
    Spread meringue over pastry base and bake for 25 to 30 minutes or until skewer comes out clean and dry.
  • Step 7
    Cool then cut into squares.

Store in an air tight container.
