A popular, moist meatloaf that is baked in its own barbecue-flavoured sauce. Great with mashed potatoes and vegetables, with the sauce drizzled over them.
Ingredients
- 500 g sausage
- 500 g beef mince
- 1 cup fresh breadcrumbs
- 1 onion chopped
- 2 tsp curry powder
- 1 egg
- 1/2 cup milk
- 1/2 cup water
Sauce
- 1/2 cup water
- 1/4 cup brown sugar
- 1/2 cup tomato sauce
- 1/4 cup Worcestershire sauce
- 2 tbs white vinegar
- 1 tsp coffee (liquid)
- 2 tbs lemon juice
- 2 tbs butter
Method

Step 1Combine the minces, breadcrumbs, onion, curry and lightly beaten egg in a bowl. Add salt and pepper if desired.

Step 2Beat together until well combined.

Step 3Gradually add mixed milk and water, and continue beating until fairly smooth.

Step 4Place in greased baking dish.

Step 5Bake at 180C, covered, for about 30 minutes.

Step 6Remove from oven, pour off surplus fat, pour sauce over and return to finish cooking for another 30-45 minutes. Baste sometimes with the sauce.

Step 7Sauce: Combine all the ingredients in a saucepan, bring to the boil and simmer gently for 5 minutes.

Recipe Notes
The meatloaf ingredients are optional, sometimes I use a lot more mince than sausage meat. I find I never need as much milk and water.
I mix it fairly roughly with clean hands, as it's easier, until it is just combined nicely, and it is fine - doesn't have to be as smooth as recipe states.
This recipe can also be rolled into balls, and baked in a dish in the oven for 30 minutes. Pour sauce over and cook another 20 minutes.
Serve with rice instead of the vegetables.
