A nice treat.
Ingredients
- 3 tbs butter
- 5 tbs plain flour
- 1 cup beef stock (liquid)
- 250 g lean beef steak, cooked, shredded
- 1/4 tsp salt
- 1/2 tsp ground pepper
- 1/8 tsp nutmeg
- 1/4 tsp Worcestershire sauce
- 1 cup dried breadcrumbs
- 2 egg whites
- 2 tbs oil
- 1 tsp parsley
- 1 mustard
Method

Step 1Heat butter , stir in flour and cook for 2 minutes. Gradually add the beef stock, stirring constantly until a smooth paste is formed.

Step 2Add meat, salt, pepper, nutmeg and Worcestershire sauce. Spread out on flat plate refrigerate until firm.

Step 3When set, form into 8x2 cm croquettes. Roll each in breadcrumbs, then in beaten egg whites, then breadcrumbs again, making sure that each one is completely covered in breadcrumbs.

Step 4Deep fry in hot oil, a few at a time, for about 3-5 minutes. Drain and serve piping hot. Garnish with parsley. Serve with mustard.
