An easy meatball dish that is sweet with a bit of spice. My younger siblings love it.
Ingredients
- 500 g beef mince
- 1 onion finely chopped small
- 3 tbs dried breadcrumbs
- 1 tbs Worcestershire sauce
- 1 egg
- 1 tbs butter
- 1/2 tbs curry powder
- 2 tbs tomato paste
- 2 beef stock cubes
- 2 tbs brown sugar
- 600 ml coconut milk
- 3 tbs massaman curry paste heaped
Method

Step 1Combine mince, onion, breadcrumb, Worcestershire sauce and egg. Roll into balls.

Step 2Heat butter in frying pan on high and quickly brown the balls well.

Step 3Sprinkle the curry powder over meatballs and turn heat to medium. Cook for 1 minute.

Step 4Add the remaining ingredients to the frying pan.

Step 5Stir gently and leave to simmer for 5 minutes.

Step 6Place one cup of coconut milk in saucepan and heat.

Step 7Add the remaining coconut and Massaman curry paste little by little and stir gently on low.

Recipe Notes
You can add vegetables like broccoli, cauliflower, chopped carrots and green beans if wish in the curry sauce.
If you find the massaman curry mix still a bit too spicy, add more coconut milk and a tablespoon of tomato paste to mellow it out. If you do not have massaman curry paste, use one of your favourite curry paste like Thai green or yellow curry instead.
Serve with rice or on a bed of mashed potatoes.
