Ingredients

  • 2 cups caster sugar
  • 1 1/2 cups unsalted butter
  • 7 eggs
  • 3 tsp baking powder
  • Vanilla essence
  • 1 cup buttermilk
  • 4 to 4 1.2 cups self-raising flour
  • Rind of 1 lemon
  • Slivered almonds, to decorate

Method

  • Step 1
    Add one at a time, in the order as they appear above. Beat until combined. Wrap a gold coin in baking paper or foil and push into the cake.
  • Step 2
    Bake at 180 C until golden.
