For a decadent, crowd-pleasing dessert this Christmas you can’t go past a no-bake Malteser tiramisu. Layered with a delicious chocolate mascarpone mousse and sweetened with crushed Maltesers throughout, it can be prepared ahead of time ready to wow your guests.
Ingredients
- 200g dark chocolate
- 280g Mars Maltesers
- 2 eggs
- 1/3 cup caster sugar
- 250g mascarpone
- 600ml thickened cream whipped
- 2 cups strong black coffee (liquid)
- 3/4 cup Baileys Irish cream
- 600g Savoiardi sponge finger biscuits
Method
-
Step 1Place 80g dark chocolate in a bowl over a saucepan of simmering water. Stir until melted, then spread in a thin layer on a tray lined with baking paper. Leave to set, then break into shards.
-
Step 2Add remaining chocolate to the same bowl and stir until melted. Set aside to cool slightly.
-
Step 3Place two-thirds of the Maltesers into a ziplock bag, cover with a tea towel and roughly crush with a rolling pin. Reserve remaining Maltesers for decoration.
-
Step 4Whisk eggs and caster sugar until pale and frothy. Add melted chocolate and mascarpone and whip to combine. Gently fold through half of the whipped cream, reserving the other half.
-
Step 5Combine coffee and Baileys in a bowl. Dip Savoiardi biscuits one-by-one in the coffee mixture and place in a single layer on the bottom of a large serving bowl. Spread over half of the chocolate mascarpone mousse, the sprinkle over half of the crushed Maltesers. Repeat with a second layer of dipped Savoiardi, then the remaining mousse and crushed Maltesers. Finish with a third layer of dipped Savoiardi. Spread reserved whipped cream over the top.
-
Step 6Decorate with reserved whole Maltesers and chocolate shards.
Recipe Notes
Serve in bowls by scooping out portions with a large spoon.
You can prepare this dessert a few hours before serving. Keep covered in the fridge and decorate with Maltesers and chocolate just prior to serving.
