How to make mac ‘n’ cheese in the slow cooker: key tips
Coating the macaroni in flour and grated cheese helps to prevent the pasta shapes from sticking together in the liquid, and also builds the thick cheesy sauce.
As the pasta cooks, starches are released, which can cause the shapes to clump. Stirring the mixture at least once during cooking helps to distribute the starches throughout the cheesy sauce, loosening up the pasta mixture.
As the peas are already cooked, you will only need to heat them through before they are ready to eat.

Macaroni is a small short pasta that is the ‘mac’ behind mac ‘n’ cheese. You could also use other pastas, such as elbows, ditalini or liscio piccolo, if that’s what you have.
Cheddar cheese is easily available and affordable and ranges in flavour from mild to sharp. You can choose whichever style you prefer in this dish.

Ingredients
- 200 g macaroni
- 200 g cheddar cheese finely grated
- 1/4 cup plain flour
- 3 cups chicken stock
- 25 g butter chopped
- 2/3 cup frozen peas *optional
- 1 handful chives chopped *to serve
Method

Step 1Place macaroni, cheddar and flour in a 3L (12 cup) slow-cooker. Using hands, mix until well combined.

Step 2Bring stock to the boil in a small saucepan over high heat. Pour over pasta. Add butter and stir to mix well. Cover and cook on high for 1 1/2 hours, stirring after 45 minutes to break up any clumps of pasta.

Step 3Stir in peas. Stand for 1-2 minutes. Season with pepper. Serve sprinkled with chives.

What meat can I add to this mac ‘n’ cheese?
You can easily bulk up this dish with barbecued chicken or cooked bacon or sausages. Add shredded barbecued chicken and chopped cooked bacon or sausages at the same time you add the peas and then heat through before serving.
Make a lasagne with a mac ‘n’ cheese topping
Pimp up an everyday lasagne by topping it with your slow cooker mac ‘n’ cheese (minus the peas) and then browning the top until golden under an oven grill. The family will absolutely love it!
