Ingredients

  • 1 cooking oil spray
  • 1 potato cooked diced peeled
  • 1 cup sweet potato cooked cubed
  • 1/2 red capsicum diced
  • 1 zucchini thinly sliced
  • 2 shallots chopped
  • 3 egg
  • 3/4 cup light milk
  • 2 tbs plain flour
  • 1/2 cup low-fat tasty cheese grated
  • 2 tbs fresh dill chopped

Method

  • Step 1
    Preheat oven to 180C. Lightly grease a 23 cm pie dish.
  • Step 2
    Arrange the vegetables over base.

  • Step 3
    Combine eggs, milk, flour, cheese and dill in a bowl.
  • Step 4
    Pour over vegetables. Bake for 40 minutes or until just set.
  • Step 5
    Serve either hot or cold with salad.
Recipe Notes

I used butternut pumpkin instead of sweet potato and I also used mixed herbs instead of the dill.
