This lovely rocky road is made with the loveliest of ingredients! There's smooth and glossy chocolate plus all your favourites: Cherry Ripe chocolate bars, Turkish Delight, pistachios and peanuts, pillowy marshmallows and a touch of coconut.
Ingredients
- 1/4 cup pistachios, without shells
- 4 x chocolate-coated Turkish delight bars, chopped
- 375g Plaistowe milk chocolate
- 250g marshmallows, cut into small pieces
- 4 x Cherry Ripe chocolate bars, chopped
- 250g Plaistowe dark chocolate
- 1/3 cup salted, roasted peanuts
- Desiccated coconut, to sprinkle
Method

Step 1Line a 20cm x 20cm tray with baking paper.

Step 2Mix dark and milk chocolate in a bain-marie or microwave until smooth and glossy.

Step 3Mix 3/4 of the pistachios, 3/4 of the nute, 3/4 of the marshmallows, all the Turkish delight and all the Cherry ripe in a bowl.

Step 4Pour melted chocolate over mixture and mix gently until combined. Sprinkle with remaining marshmallows, pistachios, peanuts and desiccated coconut.

Step 5Chill for 2 hours until set.

Step 6Cut into small squares and store in an airtight container.
