Ingredients

  • 250 g butter
  • 1 tbs lemon rind grated
  • 1 1/4 cups caster sugar
  • 3 eggs
  • 3/4 cup sour cream
  • 1 cup self-raising flour
  • 1/2 cup plain flour

Lemon syrup

  • 1/3 cup lemon juice
  • 1/4 cup sugar

Method

  • Step 1
    Cream butter, lemon rind and sugar until light and fluffy, beat in eggs one at a time.

    Stir in sour cream, then sifted flours and mix until smooth. Pour into a greased 20 cm ring or baba tin.
  • Step 3
    Bake at 180C for 50 minutes or until skewer comes out clean.
  • Step 4
    Cool in tin for 5 minutes, turn onto wire rack with tray underneath.
  • Step 5
    Lemon syrup: Combine lemon juice and sugar in pan, stir over heat until sugar has dissolved.
  • Step 6
    Bring to the boil. Pour hot syrup evenly over hot cake.
Recipe Notes

This can be baked in a convection microwave at 180C for 25 minutes.
