Lovely on its own, or can be served with whipped cream for dessert.
Ingredients
- 250 g butter
- 1 tbs lemon rind grated
- 1 1/4 cups caster sugar
- 3 eggs
- 3/4 cup sour cream
- 1 cup self-raising flour
- 1/2 cup plain flour
Lemon syrup
- 1/3 cup lemon juice
- 1/4 cup sugar
Method

Step 1Cream butter, lemon rind and sugar until light and fluffy, beat in eggs one at a time.

Step 2Stir in sour cream, then sifted flours and mix until smooth. Pour into a greased 20 cm ring or baba tin.

Step 3Bake at 180C for 50 minutes or until skewer comes out clean.

Step 4Cool in tin for 5 minutes, turn onto wire rack with tray underneath.

Step 5Lemon syrup: Combine lemon juice and sugar in pan, stir over heat until sugar has dissolved.

Step 6Bring to the boil. Pour hot syrup evenly over hot cake.
Recipe Notes
This can be baked in a convection microwave at 180C for 25 minutes.
