Ingredients
- 180 g butter melted
- 150 g caster sugar
- 100 g polenta
- 150 g almond meal
- 1 tsp baking powder
- 1 lemon zested
- 1 tsp icing sugar sifted *to decorate
- 3 egg
Method

Step 1Preheat oven to 180C. Grease and line the bottom of a round cake tin with baking paper.

Step 2Mix sugar and melted butter together in a large bowl. Slowly add one egg at a time along with the polenta, almond meal and baking powder. Add the lemon zest and mix until well combined.

Step 3Pour into prepared cake tin and bake for 40 mins. Once cooled slightly, add sifted icing sugar. Serve with ice cream and passion fruit pulp.
